Boil the potatoes, let them cool, and then peel them.
Clean the mushrooms, cut off the stalks and chop them finely.
In a frying pan, heat a little oil and add a clove of garlic. Add the shelled sausage and the mushroom stems. Cook over medium heat and then season with salt and pepper.
In a bowl, mix the mashed potatoes with the sausage and mushrooms. Add the Gorgonzola Pdo and chopped parsley.
Fill the mushroom caps with the mixture and lay them on a baking sheet. Bake in the oven at 180° for 20 minutes. Serve immediately.
