Savoury Blinis with Gorgonzola PDO, fish roe and dill

Ingredients

  • 100 g Gorgonzola PDO
  • 50 g fish roe
  • q.b. dill pepper

 

for the blinis:

  • 80 g flour
  • 8 g instant yeast
  • 50 ml fresh single cream
  • 100 ml milk
  • 1 egg
  • 1 knob butter
  • 1 pinch salt

Preparation

  1. Start with the blinis. Separate the egg yolk from the egg white and whip the white with the help of an electric whisk. Beat the yolk in a bowl with milk and cream. Then add the sieved flour and baking powder.
  2. Fold the beaten egg white gently into the mixture with a pinch of salt. Heat a non-stick frying pan and grease lightly with butter, then pour 3 tablespoons of the mixture in the pan, keeping them well spaced out.
  3. When the mixture has solidified, turn the blinis over and brown the other side. Continue until all the batter is used up.
  4. Leave to cool and top with Gorgonzola PDO, fish roe, dill and a pinch of pepper
