Pumpkin Fries with Gorgonzola PDO Sauce

Ingredients for 4 people

  • 500 g cooked pumpkin from the day before
  • 200 g Gorgonzola Pdo
  • 200 ml fresh cream
  • 2 teaspoons of paprika
  • 4 tablespoons of breadcrumbs
  • EVO oil
  • thyme to taste
  • rosemary to taste
  • salt
  • pepper

Preparation

  1. In a bowl, combine the breadcrumbs and paprika.
  2. Cut the pumpkin into sticks and then bread them in the bowl with the breadcrumbs. Transfer the sticks to a baking sheet lined with baking paper and add a drizzle of EVO oil, herbs, salt and pepper.
  3. Bake in a preheated oven at 200° for 10 minutes. For the Gorgonzola Pdo sauce, heat the cream in a saucepan and then add Gorgonzola Pdo, melt and season with pepper. Set aside.
  4. Serve the pumpkin fries with the Gorgonzola Pdo sauce.
