Ravioli with sweet Gorgonzola PDO sauce, crunchy bacon and aromatic herbs

Ingredients

  • 500 g Ravioli (with mushrooms)
  • 300 g Sweet Gorgonzola PDO
  • 30 g Butter
  • 150 g Full-fat milk
  • 30 g Flour
  • 160 g Smoked bacon (in dice)
  • Salt
  • Pepper
  • Aromatic herbs

Preparation

  1. Start preparing the Gorgonzola PDO sauce.
  2. Melt the butter in a pot over low heat, add the sieved flour and the full-fat milk.
  3. Whisk quickly until the mixture becomes dense.
  4. Add sweet Gorgonzola PDO cut in small pieces and let it melt.
  5. Season with black pepper and stir properly.
  6. Set aside.
  7. In a hot non-stick pan, brown the diced smoked bacon until golden, and set aside.
  8. Cook the ravioli in abundant salted water according to the packet instructions.
  9. Drain and transfer to the pot with Gorgonzola PDO sauce, stir well and put on a serving plate. Garnish with crunchy bacon, ground black pepper and fresh herbs.
