Ricotta, Citron and Gorgonzola Pdo Cassata


  1. Prepare syrup by cooking sugar with a little water and let it cool.
  2. Meanwhile, line a rectangular mold and line it with slices of cocoa sponge cake.
  3. Wet it with sugar syrup.
  4. Place ricotta cheese, slices of spicy Gorgonzola Pdo, and whisk vigorously in a large bowl.
  5. Add the sugar syrup and whisk again. Add the candied citron cubes, some chopped pistachios and a small glass of lemon liqueur. Mix everything together well.
  6. Whip the cream and combine it with the mixture.
  7. Pour the mixture into the mold. Level it well and top it with a final layer of sponge cake.
  8. Leave it in the freezer for at least 4 hours. Unmold the cassata, cut and slice it and serve it decorated with orange zest, pistachios and a drizzle of chestnut honey.
