- Prepare syrup by cooking sugar with a little water and let it cool.
- Meanwhile, line a rectangular mold and line it with slices of cocoa sponge cake.
- Wet it with sugar syrup.
- Place ricotta cheese, slices of spicy Gorgonzola Pdo, and whisk vigorously in a large bowl.
- Add the sugar syrup and whisk again. Add the candied citron cubes, some chopped pistachios and a small glass of lemon liqueur. Mix everything together well.
- Whip the cream and combine it with the mixture.
- Pour the mixture into the mold. Level it well and top it with a final layer of sponge cake.
- Leave it in the freezer for at least 4 hours. Unmold the cassata, cut and slice it and serve it decorated with orange zest, pistachios and a drizzle of chestnut honey.
