Saffron panna cotta with gorgonzola pdo and orange sauce

Ingredients for 4 people

  • 300 ml fresh cream
  • 100 ml milk
  • 50 g brown sugar
  • 1 teaspoon agar-agar powder
  • 2 sachets of saffron
  • edible flowers for garnish to taste
  • For the sauce:
  • 150 ml fresh cream
  • 80 g Gorgonzola Pdo
  • 1 orange

Preparation

  1. In a small saucepan, heat some milk and dilute the agar-agar off the heat. Add the cream, sugar, and saffron and stir until dissolved.
  2. Put the saucepan on medium-low heat and bring to a boil while continuing to stir.
  3. Pour the mixture into 4 ramekins and let the panna cotta firm up in the refrigerator for 4 hours.
  4. Meanwhile, prepare the Gorgonzola Pdo sauce. Heat the fresh cream in a small saucepan, then add the Gorgonzola Pdo and orange zest. Melt and set aside.
  5. Unmold the panna cotta and serve with Gorgonzola Pdo and orange sauce and garnish with edible flowers.
