Salmon Teriyaki and Gorgonzola PDO sauce

Ingredients

  • 200 g skinless salmon fillet
  • 100 g Gorgonzola PDO
  • 100 ml milk
  • 140 g rice
  • 1 spring onion
  • 2 radishes
  • to taste sesame seeds baby spinach pepper

 

for the teriyaki sauce:

  • 80 ml soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon brown sugar
  • 2 slices fresh ginger

Preparation

  1. Heat the soy sauce in a saucepan, then add the brown sugar and let it dissolve. Allow to cool and add the mirin and ginger.
  2. Cut the salmon into cubes and place it in a bowl, pour in the sauce and leave to marinate for a couple of hours. Meanwhile, boil the white rice.
  3. Heat the milk in a saucepan and then add the Gorgonzola PDO. Melt it over a low heat and add pepper to taste. Cook the salmon in a non-stick frying pan with a little oil until golden, then add the marinade. Set to one side. Slice the spring onion and radishes.
  4. Arrange the rice in the bottom of a bowl, add the salmon, spinach, radishes, Gorgonzola PDO sauce and garnish with sesame seeds and spring onion.
