Spaghetti with sweet Gorgonzola PDO, prawns, courgettes and basil

Ingredients

  • 320 g spaghetti
  • 250 g sweet Gorgonzola PDO
  • 16 prawns
  • 2 courgettes
  • Fresh basil
  • Evo oil
  • Salt
  • Black pepper
  • 1 garlic clove

Preparation

  1. Wash the courgettes and cut them in small cubes.
  2. Heat 2 tablespoons of evo oil and a garlic clove in a non-stick pan.
  3. Add the courgettes and cook over high heat for about 10 minutes.
  4. Add the prawns and cook for 2 minutes.
  5. Season with salt and pepper and set aside.
  6. Cook the spaghetti in abundant salted water according to the packet instructions.
  7. Drain while “al dente” and transfer to the pan with courgettes and prawns.
  8. Sauté over high heat and add the Gorgonzola PDO flakes.
  9. Serve hot with fresh basil and ground black pepper.
