Wrap Piadina with Spicy Gorgonzola Sauce

Ingredients

  • 2 piadinas
  • 120 g mortadella
  • Shelled pistachios q.s.
  • 1 Tropea onion
  • 2 tablespoons of semi-dried tomatoes
  • Rocket q.s.

FOR THE GORGONZOLA SAUCE

  • 100 g spicy gorgonzola
  • 2 tablespoons of fresh cream
  • 1 pinch of cayenne pepper powder

Preparation

  1. For the gorgonzola sauce, melt the crumbled gorgonzola in a non-stick pan with the cream and a pinch of cayenne pepper powder. Once the sauce is smooth, pour it in a sauceboat and leave to cool.
  2. Start preparing the piadina wrap. Warm the piadina up slightly and then put it on a cutting board.
  3. Place the rocket, mortadella slices, thinly sliced raw onion, ground pistachios and drizzle the gorgonzola sauce on top.
  4. Roll it and tie it with a twine. Serve immediately.
