Breaded salmon bites in a Gorgonzola and capers sauce
Ingredients
500 g Salmon ((fresh))
50 g Turmeric breadcrumbs
Extra virgin olive oil
Salt
Black pepper
For the sauce
30 g Butter
150 ml Full fat milk
30 g 00 flour
200 g Sweet Gorgonzola PDO
1 tablespoon Capers
Black pepper
Preparation
Start preparing the gorgonzola and capers sauce. Melt the butter in a small pot over low heat, add the sieved flour and the full-fat milk. Stir quickly with a whisk until the mixture becomes dense.
Add SWEET GORGONZOLA cut in small pieces and the capers, and let it melt. If necessary add black pepper and stir properly, pour the sauce in a sauceboat.
Cut the salmon in cubes and bread them in the turmeric breadcrumbs mixed with salt and black pepper.
Put the bites in a baking tray covered with greaseproof paper and add a dash of evo oil.
Preheat the oven to 180° and then cook for 10 minutes. Remove from the oven and serve immediately with the SWEET GORGONZOLA and capers sauce.
