Octopus skewers and Gorgonzola PDO sauce and gremolada
Ingredients for 2 people
100 g boiled octopus
100 g Gorgonzola PDO
50 ml milk
1 lemon
to taste: salt pepper
for the gremolada:
1 sprig parsley
1 clove garlic
1/2 lemon zest only
Preparation
To make the gremolada, finely chop the parsley with the garlic and lemon zest.
Transfer to a bowl and add a little olive oil. Start preparing the sauce with Gorgonzola PDO by heating the milk in a saucepan and then adding the Gorgonzola PDO.
Melt it over a low heat and then add a twist of freshly ground pepper. Set to one side.
Cut the boiled octopus into chunks and push onto skewers.
Grill them on both sides together with the lemon slices. Serve the octopus with the Gorgonzola PDO sauce, the gremolada and the grilled lemon.
