Pumpkin and potato croquettes with a heart of Gorgonzola PDO


  1. Boil 250g potatoes in plenty of salted water and then mash them with a potato masher. Scoop the mixture into a bowl.
  2. Peel 200g pumpkin and cut it into pieces. Place it on a baking tray and season with EVO oil, salt, pepper, oregano and thyme. Bake in a preheated oven at 180° for 20 minutes. When it is cooked, transfer it to the bowl together with the potatoes. Mash with the help of a fork. Add 100g breadcrumbs, 1 egg, salt, pepper and paprika. Mix until smooth.
  3. Shape into balls and place 80g Gorgonzola Pdo in the center. Then, seal well. Shape them and then bread them in flour, egg and finally in breadcrumbs. Fry in plenty of oil until golden brown. Salt and serve them immediately.
