Spring vegetables salad with cubes of Gorgonzola Pdo and yoghurt sauce

Preparation

  1. Peel 6 asparagus, 100g fresh peas, 4 radishes, 1 cucumber, 1 courgette, 2 carrots and 200g fresh spinach. Cut everything to powder with a potato peeler. Transfer the vegetables to a bowl and season with a little EVO oil and a pinch of salt.
  2. Finely chop a few herbs (1 sprig marjoram, 1 sprig mint and some fresh basil) and lemon zest. In a bowl, mix 200g Greek yoghurt with EVO oil, salt, black pepper and chopped herbs.
  3. Transfer the vegetables to a serving dish, add 150g Gorgonzola Pdo and garnish the salad with the yoghurt sauce.
