TOMATO MUSH PATTIES WITH SPICY GORGONZOLA PDO

Ingredients

  • 400 g tomato mush from the day before
  • 100 g Spicy Gorgonzola Pdo
  • Breadcrumbs
  • 2 eggs
  • Frying oil
  • Salt
  • Pepper

 

For the green sauce:

  • 20 g fresh parsley
  • 20 basil leaves
  • 1/2 clove of garlic
  • 2 tablespoons of lemon juice
  • 60 ml Evo oil
  • 40 ml cold water
  • Salt

Preparation

  1. Start by preparing the green sauce. Place all ingredients in the glass of an immersion blender and blend until smooth and creamy.
  2. Move on to the preparation of the patties. Grease your hands.
  3. Take a spoonful of tomato mush, crush it in the palm of your hand, and place a cube of Spicy Gorgonzola Pdo in the center.
  4. Fold, forming a patty, and seal well. Proceed until all the mixture is used up. Bread the patties first in beaten egg and then in breadcrumbs.
  5. Fry them in plenty of hot oil until golden brown. Season with salt and serve immediately with the accompanying green sauce.
