Caseificio Brusati was founded in the 1930s on the initiative of Giovanni Brusati who, having moved to Trovo (PV), decided to set up his own company, having already gained experience in the dairy sector.
Even today, all milk processing takes place in traditional 6-quintal cauldrons, which allow subsequent operations to be carried out, exclusively by hand.
